What does /ck/ think about onions?

What is your favorite type and your favorite use for onions?

I like sweet onions to cook with.

Red onions in salad.

Kind of curious here, what's the main difference from onions in OP's pic to the purple ones? I bought some of both for some quesadillas and after trying each out (cooked) I couldn't tell a difference.

You can eat the purple one raw, sliced thinly and used sparingly in a salad or something they're pretty good.

In my experience, brown/yellow onions tend to have a strong, pungent, and characteristically "oniony" flavour which many people (including myself) do not like raw. However, that flavour mellows and takes on a sweetness when the onions are fried or otherwise cooked.

Red/Spanish/purple onions don't have such a strong flavour raw and are better for salads. They can still be overpowering if your use too many though, so slice them thinly and use sparingly. Less is more.

White onions for cooking, red onions for eating them raw, for example in sandwiches.

At your next barbecue, wrap an onion in aluminum foil and throw it on the grill for half an hour or so. It comes out really sweet, buttery and soft. It's great.

Brown onions are softer and more translucent uncooked, not many people have them raw. They're more pungent and strong than red onions. They go really well with red meat, vegetables and gravy.
Red onions are crunchier and often eaten raw. A bit sweeter than brown onions. Add a nice colour for presentation, mostly used more in spicy foods like tex-mex or just salads, whereas brown onions go in shit like a roast.
