Not really related, but i value the the feedback i could potentially get in this thread. Cooking is my hobby, i have no formal training or work experience but i can make good food, i don't feel out of place working within the pages of cookbooks like eleven madison, ad-hoc at home or whatever. I understand my experience with cooking has been a personal one and that is to say i've never had to cook on a line, under pressure in a professional environment. Anyhow, i am thinking of quitting my IT job because despite the money i fucking hate it and feel dead inside. I understand i'd take a massive pay cut and essentially be building a new a career from the bottom up but at the end of the day do any of industry cocks love what you do? Am i crazy?

being a previous dishwasher i know how shitty cooks can be when they know ill clean everything up afterwards, so as a line cook now i keep my area clean.
What really sucks is the food quality is subpar. The can of tomatoes gets blitzed and thats what we call our homemade sauce. Pasta is prepped boiled, then reboiled and tossed with the sauce in a pan. It sucks.

Working in a kitchen is what I do before I transition to a real career. Sorry not everyone can be Gordon and his peers. Most stay absolute crap restaurants, some elevate to good quality ones, few make it to top tier places. Its a lifelong shitshow. The restaurant industry is full of drama via, crazy kitchen staff who are refusing to work right now , to stacy the FOH waitress who is about to have a meltdown because her life is so hard.

Working in a restaurant is a job that's easy to romanticize because it's fast paced, hot and you have a million people running around. And on nights where everyone has their shit together it's exactly like your Hollywood movies about how cool it is to work in a kitchen.
Even in places with 3-4 BOH staff that only happens twice a year, the rest is getting yelled at, yelling at people and lots of booze and hate.
Upside is you don't bring shit home, when you leave you don't have to worry about work until the next time you come in.

Just started working at a butcher shop and i know nothing as do many of the people that buy meat pork and all we have to offer.

I'll be visiting this board a lot more often.
