Here in Italy tough if we use guanciale we don't put oil in the pan (because guanciale already has a lot of fat), you can choose pancetta if you want.
Also, I'd use only the yolks, the rule says "uno a testa, più uno intero per la padella" meaning : "one egg yolk for each person plus an egg for the pan" so if you're 3 just use 4 eggs.
In the original recipe you should use the Pecorino Romano, but we use Parmigiano as well (be sure to only buy true Italian products, if it has "parmesean on it, leave it there")
Use a good type of pasta, here in Italy Barilla is one of the cheapest and most used, but it's better if you find De Cecco, Garofalo, Agnese. Cook it "al dente".

I am Italian.
Obtain guanciale, fry it in a pan. Cook the bucatini. Meanwhile in a bowl wish the eggs with some pepper and salt. Drain the pasta and put in the pan with the guanciale. Then put the pasta in a suitable pasta container and pour the eggs mixture on top. Stir.
