Also yeah don't dump the hoisin and sriracha right into the bowl, try some plain first then take some broth into the spoon, add the desired amounts of both and dip the noodles/meat into the spoon. Both sauces end up overwhelming the broth usually so this way you still get to taste all three.

Place near where I live only does Bo Bun Hue on the weekends. It used to be the best thing on the menu in my opinion. But lately I've really been digging the pho.

I get Pho at a place that kinda caters to western tastes. The Pho they serve their doesn't have any anise in it, and honestly, just tastes like a beef broth with tendons and beef balls. It has chives, cilantro, rice noodles, and they offer lime, mint, bean sprouts, siracha, and hoisen sauce as sides/additions. I'm not sure if it can be called legit Pho, but I love it.
