Make balsamic reduction
Bake sweet potato till soft
Use tortillas, bake them I the oven by hang in on the rack in taco shape
Make your meat a bit spicy and add 3 table spoons of honey for every two pounds of beef
1/4 sweet potatoe inside the taco cover the whole inside
Add meat
Add light drizzle of balsamic reduction over meat
Add sour cream
Another light drizzle over cream
Add mozzarella (shredded)
Siracha on the side (really brings in all the flavors)
Without its still delicious
Original recipe out of necessity and cuz few ingredients

Here's the recipe for the chicken dish:

1 onion
2 long green chillies, chopped coarsely
3 garlic cloves
50ml of olive oil
ground cumin, coriander and chilli - 2 tsp of each
1/4 tsp of cinnamon
1.5 cups of chicken stock
200g of canned chopped tomatoes
3 chipotle chillies in adobo
6 skinless chicken thighs, diced
40g mexican chocolate (don't know if my mum uses this though)

1. toast cumin and coriander seeds in dry pan until aromatic then ground to a powder. Saute onion and garlic until tender then add the spices, stir for a minute until fragrant. Then add the stock, tomatoes, chipotle chillies, bring to the boil then simmer
2. Add chicken, season to taste and cover, reduce to a simmer then cook for 6-8 minutes (or until tender).
3. Add the chocolate and simmer till reduced slightly

Seems super simple, and sorry for all the metric measurements, but i'm sure you'll manage

Here's the green rice recipe:

2 cups of basmati rice
2.5 cups of chicken stock
1 tsp salt
1/2 an onion, chopped finely
2 garlic cloves, finely chopped
1 bunch of parsley leaves
1 tbsp of olive oil
1 jalapeno
1/2 cup of coarsely chopped coriander leaves
2 spring onions, chopped
juice of 2 limes

1. Heat oil, add rice until slightly toasted, stir in the onion and garlic. Season with salt
2. Pour in the stock, bring to the boil then reduce to simmer. Cook for 8 mins
3. Turn off the heat, leave covered for at least 15 mins
4. Meanwhile chop/process the parsley, coriander, jalapeno, lime juice, spring onion and salt, then stir into the rice. Make sure all the grains are coated with the seasoning

Again super simple. I actually made this the other night.

There's a fuckload of tacquerias ran by several generations of mexican families, which have very cheap but authentic food. There's a large Hmong community too, which is also inexpensive and filling. The white community's influence has dwindled in the past decade due to the low demand for mom & pop joints, but you used to be able to find a diner on just about any street corner and get anything from breakfast to a hearty dinner any time of the day.

Why does al pastor tacos in Mexico taste so different than American tacos al pastor?

When I was in Mexico tacos al pastor were so fucking delicious I would order like 9 every time I went out. They had the meat on like one of those spinny that Mediterranean food places put lamb on. They put pineapple and lime with some onions and cilantro and some of that amazing green sauce. Fuck me that's the only thing I miss about Mexico.

But over here in the states they taste like shit. It tastes like an entirely different meat. It's dry and bland tasting. I've been to fucking hundreds of Mexican places and tried to al pastor. San fransisco, Los Angeles, Portland, Seattle, Austin, New Mexico, Arizona
