There's a place in Cairns called Tjapukai where they grill you up a pretty sweet bush tucker lunch of roo, emu, barramundi and croc seasoned with bush herbs and quandong and stuff. Plus witchetty grubs and various nuts and odds and ends. There's also a place called Ochre in the city that does a more contemporary take on a lot of local and native ingredients.

This is a brandy ginger log.
Take a pack of hard ginger snap biscuits (cookies for our Western Hemisphere cousins). Dunk the ginger snaps in brandy and stick them together with brandied whipped cream to form a log. Cover the log with more brandied whipped cream. Leave for 24 hours in the fridge to set, then serve to your ten year old nieces and nephews at Christmas for maximum laughs.

It's a bit of a forgotten 1950's classic but it's tasty and full of sugar, fat, carbs and booze.
