Mushroom hunting is pretty common activity in Slaviccountries. As I've said earlier in the thread I've been picking mushrooms with my granparents since childhood.
You usually take your family drive to the woods and make a family trip out of it.

They look like parasol mushrooms op. The way to check if they're the legit stuff is to try to move the ring around the stem. It should be free moving, as in you can slide it up and down without having to tear it first. If it doesn't do that, it's the parasol inedible twin and it will give you indigestion.

If they are parasols, my favourite way of cooking them is whole (without the stem, which is usually quite woody) deep fried in a light batter.

Cant believe it took so long for this suggestion. Thats the only reason I came here. Personally I would use garlic instead of onion. Also quite a few herbs can work in saute mushrooms. Thyme goes well, but so does parsley, a little tarragon or some chervil.

Adding a little crisp pancetta also goes nicely. Bake it between two oven trays and it stays flat and goes crisp. But the mushrooms are the main event here so dont need too much.
