Gen X, tbh. Boomers and millennials have similar consuming behavior, with millennials having a different set of entitlements than their parents.

Xers have a very large chip on their shoulder. They've had to work really hard for what they have, because they came from very little. Many never saw their parents because both worked outside the home. They raised themselves a lot of time. They went to college and came out the other end jobless and with a great feeling of hopelessness. They struggled for a long time. It ruined the attitudes of many people, because they were forever skeptical about buying, being marketed to, etc.

In short, they tend to be shitty customers because they're stubborn and tough to get into.

I remember walking into a party in college, (this was in the early 90s) and there was a full size mirror covering the coffee table that was literally covered in lines for people. There was probably $3000 worth (which was a lot at that time) of cocaine laying there.
I had a friend who would regularly get "gift boxes" of drugs from her dealer, which were wrapped like a fucking Christmas present, and contained a baggie of coke, a baggie of meth, joints, mushrooms, several hits of acid, and several hits of X.
The worst trip I ever had was after my X and acid melted together in the hot car.
In high school, my friends regularly had giant bonfire and hot tub parties, fueled by alcohol that was provided by adults, with plenty of drugs that were supplied by everyone else.
All those "cliche" 80s movies like Ferris Bueller, Sixteen Candles, Weird Science, Better Off Dead, and newer ones like Hot Tub Time Machine, ALL TRUE TO LIFE. And I wasn't even living in a big city, I can't imagine the shit that went down for other people.

They are fairly similar but it definitely goes to Boomers. Generally speaking older people are way less forgiving, younger customers will either be the same way or not really give a fuck.

As far as fine dining goes, I think there is a more clear divide by race. Whites are certainly the worst, Blacks follow, and everyone else like Asians and Mexicans are typically the best as they almost never send orders back or complain if we "forgot" to take out onions. The latter hardly ever asks for modifications to begin with.

The important gaps have way more to do with technology (and war if you're getting back to the greatest generation through the boomers) than anything else. Generational gaps break down a bit when you attempt to compare someone who has memories of pre-internet boom and post. The absorption of this into their cultures is largely defining to their attitudes. Right now older Gen Y/millennials/whatever the fuck you want to call them are struggling with their politics being mostly university-driven with extremely dumb hypersensitive shit jumpstarted by the previous generation who is now aghast by the extremist quality they created but could not fully anticipate the meaning of. There's a split in this generation of people between those who are unable to tear away from the instant social gratification of the internet and those who can.

So on one hand you have a group of people who are irrational and going to satirical levels of political correctness and on the other hand you have people old enough to happily continue selling out the future of those ahead of them for shit that is immediately self-serving. Look at issues like net neutrality.

As far as customers go, they are just as bad in different ways. Most customers are going to be fine, but some are going to be special snowflake shitheads. One just may use a bit more technology and the other may scream for the manager and demand comps.
