"'äggost" or if translated directly, "eggcheese"

you mix a shitload of eggs and a shitload of milk, some vinegar or something similar and intentionally make it curdle, you take this curdled milk/egg stuff, place it in a mold and let it sit. this was traditionally a side dish for pickled herring for celebrations. parties and such. we usually sandwich layers with some sugar sprinkling, making it a sweet dessert.
our family usually makes 2-3 batches for christmas (one for us and the rest for the family) and one batch for easter

it tastes like an eggy and slightly fucked up cheesecake. it's usually served with some home-made jam, cloudberry being my favorite for it
