Did something simple. Just cooked up some tilapia fillets in a pan with lemon pepper and butter. I know it's simple, easy, and quick, but they came out really good.

Always loved fish and seafood my whole life. Let's get a fish thread going.

I know the feeling dude, my family all fish for recreation. We may live in the Midwest but lakes, ponds, and rivers make for good fishing and my God I cannot eat tilapia. It is like a mushy flavorless version of blue-gill. All I can say is that the freezing process MUST take a lot out of the meat.

Looks a touch uneven towards the middle there, but looks fine for eating.
I like my mackerel with either a vinaigrette or strong lemon sauce. Some kind of gremolata or tartare is acceptable too. For whole ones I like to deeply score the skin, after scaling of course, stuff the cavity with dill, lemon, thyme, lemon verbena and plenty of salt. Grill until the skin goes crispy.
Serve with beer in the sun, ideally while some greasy Mediterranean type mumbles incomprehensibly at you in a foreign language.
