glutamate is an amino acid. MSG is glutamate with a sodium ion.

MSG is the same thing as salt for your body, some bodies react negatively to it. a better cook will incorporate non salt based glutimates into food through distilling and the creation of sauces.

msg is typically added to things you want to taste savory but are too lazy or cannot work in a sauce with the necissary glutimates to replace it.

umami is the taste experienced when glutamate receptors on our tongues are triggered. the term can also be used to refer to the overall experience from the triggering of these receptors in conjunction with pleasant smells. 'savoury food' is generally both salty and umami but can still be considered savoury with little of one or the other.
