/pol/tard here. I was going to pay $5K and do a year of chef training at Niagara College in Canuckistan, but my high levels of autism are telling me to just grab a book and self teach in the privacy of my bunker.

I have decent home skills (can make breads, pastry, sauces, etc), but suck at knife skills, charcuterie, meat and fish. Not looking to do this as a career (lol minimum wage and kitchen staffs are degenerates).

Is there a good book that /ck/ can recommend, or should I suck it up and try to blend in with the normies? Maybe redpill the unwashed smoker masses?

honestly I've worked in the restaurant industry in the west coast only. its not nearly that violent or harsh, but there is a lot of shit, a lot of pressure, and a lot of fuck heads and druggies. I'm also kind of oblivious to a lot of this stuff at first glance since I don't drink party or anything. odds are if theres sex to be had I just don't know where to look

I can tell you some shit I've seen though;
one pizza chef I worked under threw throwing knives at the dry wall and pizza boxes, and allegedly he ripped off the store before he split town. I worked in a shit show asian restaurant which had terrible practices of hygine with my best friend, getting cut and working to both the expectation of the line while trying to keep the fucking waitresses away from the dirty silverware whenever we ran out, while unable to do shit about them storing bagged meat underneath a dirty ass table. fighting rats in the attict in one location, while in the waterfront one I was solely the dish prep and worked with the cut caps of cans, taping them with duct tape over the dry wall over places the mouse had chewed into. its pretty much impossible to get rid of them when you run next to water though. other dish washers I've had worked with had disappeared and left me, 14, scrubbing dishes on crazy nights while men twice my age showed up late from drinking and partying too much on the previous day. the first chef I had gave me a nick name, and used a steel cutter to turn his rig into a open air vehicle. they where loud hispanic people who where both somewhat standoffish and yet strangely friendly, our location had a secret santa event, and one of my best coats is still 12 years old and in decent condition, the same one I got from that job. in later jobs I dealt with people young as me slamming rows of dishes out of the dish washer into a wall, stacking the hot things quickly and settin them onto a bus cart for all the restaurants in the food court,

we'd fill buckets full of hot water and then wet each stack of dishes on the front, scrubbing with steel wool while dealing them out to the person who tossed them onto the racks and ran them through the washer. throw and catch became second named words to me, while thousands of people lined the tables and ordered food.

later I worked in a diner, and it was in part of a drive in garage for the apartments above, some one hit a pipe with a Uhaul and I and the chef and where the sole ones who seemed invested in keeping the water out of the restaurant while annoying waitresses stood everywhere.

Personally I think in any of these places drugs, sex, and the like could have been prevolent. the kitchen always had a kind of chummy feel, where people who couldnt speak eachothers language would fist pump, scream eachothers names, and pat your back while simultaniously try to get you or others to talk shit to someone in a language you don't know.

I don't think any of this was something I ever felt proud of like anthony did, I never really fully embraced the culture, nor did I ever really resent it. I don't know if anything is still like anthony described but based on what I've seen as a lowly transgendered person working pantry, I wouldn't really doubt it /pol/lock.

I raise my own chickens for food, and grow my own vegetables. Self-sufficiency is a huge goal of mine, and mastering some serious kitchen skills would give me immense satisfaction. It's $5K Canadian, so not as much money as you think.

Also to transfriend up a few posts, not a basher. All LGBT I have met are brotier... well you know what I mean. Old Army buddy finally took the plunge and reasigned. Blew my mind and opened it at the same time.

I'd never go to a restauarant for example, and order a ham and onion omlete, that would be so damn easy to whip up at home. ingredient or work involved it needs to have something I can't get for some reason.

typically I don't get too much illness from restaurants though, but there is stuff to be afraid of. one idiot I was in charge with tried to clean a potato with table sanitizer. but like the book goes over, theres always going to be risk whenever you eat, you can take a chance, or you can cut out experiances from your life. I'd say anthonys tips on what to avoid are pretty on star if you are worried.

I really enjoy restaurants where you can watch the kitchen from your table. Crush in Toronto is like that, and there is a little place where I live now that's the same. I like places where they don't hide behind doors, and places with kitchen basements are right out. I fear the large chains with huge staff turnovers and folks who don't give a shit.

Good point about the omelette. I never understood why people eat breakfast out, when it's the simplest and cheapest meal to make at home. Exception being a smoked trout eggs benedict which I would never attempt due to reasons you discussed.

I've had good breakfast on the out. but its normally something with a nice blend of grains, golden malted is a nice brand we used in my old diner. that malt is something you cant really get in a store as far as taste. which is the ingredient side of things.

all things considered, the place I talked about that was dirty as shit did have an open line, I don't really think that kind of thing matters all that much in terms of cleanliness.

What to Cali types (assuming that's you) think of other wine regions? Here in Niagara, Ontario we have a pretty grandiose opinion of our wines and our regional cuisine. So, go to culinary school. And you'd be surprised - sometimes you don't choose the career, it chooses you. Even if not, you'll be surrounded by people with passion for the craft. And it doesn't matter if you are surrounded by cheftards, coptards, biologytards, techtards.... you will feel their energy and you will want to compete (hopefully) or at least stay above average. That alone will teach you a bunch of life lessons you're obviously missing right now.

Yeah if you self teach you can maybe learn some more stuff. Knife skills just take practice... its like grinding in an MMO.

So... do you want to play an MMO with all bots? Or do you want to spend 5k and compete in some national MMO competetion and meet people some of who will end up being very successful?

I'm leaning 80%/20% on this. Go to culinary school. The only benefit of staying home would be to save money.

I can always tell if they worked in the kitchen end of a restaurant.

I have had some drinks here and there, its just not something I feel like I want to pay money for. as for joining reality, working on it. but networking has never been my strong suit.
