And you should respond "yes, but you have to go through that when heating" but when you add the weight of the pot onto the element that's heating the internals of the pot you get efficiencies because of gravity.

Very thick insulating tiles which are mostly air. That's why they work--the air trapped inside makes their thermal conductivity awful. There's no comparison at all between that and the thin ceramic glaze on a cooking pot.

There's a very important factor that you're forgetting in your equation.

MASS.

Yes, mass matters. It takes longer to heat up 5 cups of water than 1 cup of water.
Stainless pots are fucking lightweight. Yet a stock pot made out of cast iron would turn into a cauldron - extremely hard to maneuver.
The solution is material with even lower thermal conductivity ratings - clay. The iron is largely un-needed - a clay pot will do just fine.

The point here is to maintain a stable temperature in your stewing/braising liquid so the endless thermal expansions doesn't "wring" the fat out of the meat. This is all but impossible with stainless steel stock pots if you're using an electric range (it actually doesn't fucking matter if you're using a gas stove)

A homemade solution is to actually just use your cast-iron pan.

You're obviously not going to cater an entire party with one cast-iron pan's worth of beef stew, but for home cooking its tendency to retain heat is good enough that you can maintain a low just-boiling temperature which is ideal for stews and braising.

For larger portions, steel stock pot is also doable, because you have a lot of liquid to make up for the mass.
Just remember to stir.

Still salvageable. The important thing now is to avoid a "muddy" stock - if the vegetable was still warm when you dumped the flour in, just fish it out and pass it through a sifter. The only aluminum pots I own are two hand-me-down Revereware saucepans and my crawfish boil pot. The saucepans are 2 quart and 4 quart respectively. The crawfish boil pot is *80* quarts so needless to say it's impractical for anything but a big outdoor event.

Oh, and I have a 12" and a 14" nonstick pan. All of my larger pots are stainless with a disc bottom. I do have a couple enameled dutch ovens, but not large enough for that stew batch.
