certain foods were unheard of, like vietnamese food, greek food, gluten free, GMO, etc. And some foods were still being popularized like takeout pizza and taco bell

Nothing epitomizes 90s eating like Applebees, Chilis, Ruby Tuesday etc.

Eating out in the 90s was steak, burgers, pizza, wings. For the health-minded it was salad bars.

At home, varying widely of course, it was hamburger helper, sloppy joes, ribs, tuna casserole, perhaps a few recipes from the old country that survived two or three generations of increasingly kitchen-phobic women.
