What is your opinion on Chinese cleavers, /ck/? After using a coworker's for some prep at work (with his permission, of course) I decided to buy my own. The utility of this thing is marvellous. It's all I use now, aside from a small paring knife.

I've used one since the beginning. At my last job my head chef screamed at me for using one, saying shit like "You're not fucking Chinese" etc.
His point was that these cleavers lock you into only using them and thus your knife skills diminish.

I've never worked in a restaurant that didn't have a range of knives available for use. I've also never worked in a restaurant that every chef didn't bring their own fucking knives. House knives get put through the dishwasher, are rarely sharpened and are usually bottom of the barrel, easily replaceable knives for that reason.
