I am a massive faggot who posts his cooking on social media all the time, so yes I have pictures of things.

Nonetheless, the goal of this dish was to get rid of all of my rapidly drying produce. It includes:
Carrots
Red cabbage (the salad topping kind)
An eggplant
A haitch pepper that was so old it ripened red
Brussel sprouts.

Cooked in chicken broth and seasoned with S+P and basil. Added some Udon noodles which i have learned are really fucking salty by themselves. Still really proud of this though.

It's called a broiler pan. I used it here because I don't have a roasting pan with a rack. It lets juices and fat drain away from the meat so the roast doesn't sit in the liquid. It also allows hot air to circulate under the meat (or whatever you put on it) for more even cooking

Moqueca Bahia fish stew. Used a couple Halibut steaks.

Never cooked with plantains before, and the recipe was very sparce on details. It said to cut them into 1" rounds and bake it in the sauce (at an unspecified temperature) for 20 minutes.

They had the texture of compacted ash and had no flavor whatsoever. The rest of the stew was delicious though.

Just put this in the slow cooker.

Pork shoulder rubbed with brown sugar, cumin, paprika, mustard and salt. Seared in a pan and used the drippings from the skillet combined with vinegar, more brown sugar, tomato paste and some water to cook the shoulder in. If I remember I'll post again in 6 hours when it's done.

Tbh, id probably eat any of those dishes, they sound nice enough, just being extra picky. Although we use sprouts in quite a different way in the uk. They arent really put with 'lively' or fresh flavours like the sun dried tomatos. They are only really used in winter so go with roast meats, root vegetables, stews etc. I hate them.

Ive tried them so many ways. The closest way to acceptable was with bacon and walnut, or in a cream sauce. I like cabbage, but just cant deal with sprouts.

As for plating, I find stacking a little bit dated and also difficult to eat. The first thing I would have to do is unstack all the food. I want to be able to taste each indivivual ingredient, as well as a combination of ingredient.

If im honest, Im used to eating small portions of food. I dont eat out much, but when I do, I normally go to fairly expensive restaurants and have taster menus or whatever. Its obviously much easier to plate a smaller amount of food and make it look neat and tidy.

Belly pork is probably my favourite cut of meat of any possible cut of meat from any animal. As long as that was cooked well, Id probably not notice much of the rest.

made some Moqueca last year, the baked pumpkin was a nice addition. the only thing that killed it for me was the cilantro. I've never really used cilantro before so I never paid much attention to it. in the end I found out the hard way that I'm one of those people to who feel the taste of soap when eating it

Made salmon with toasted coconut on top, creamy garlic green bean risotto with fresh basil and ginger, and mango ginger coulis. Garnished salmon with basil chiffonade. Came out pretty well but salmon was a little bland, and the coulis was underwhelming. Gonna add basil to the coulis next attempt and maybe add a lemon zest to the salmon. Idk, came out decent enough 6/10

No picture, but I made osso bucco a few weeks ago and it turned out crazy good, so heres my recipe
>4slices of veal/beef shank (may be called osso bucco in your shop)
>2 onions, diced
>2 carrots, chopped
>Celery, chopped
>2 diced tomatoes
>garlic
>white wine
>beef stock
>flour
>salt/pepper/cumin

>dust shanks with flour, salt and pepper. brown them in pot and then take them out
>put onion, celery, garlic and carrot into pot for 10 minutes to soften them
>add diced tomatoes, cook for a few more minutes
>and wine until it covers the veggies, then put meat on top
>add stock till it covers the meat
>bring to simmer, and leave it for 1.5 - 2 hours, stir occasionally
>salt/pepper/cumin towards end
I could have probably put potatoes in too, but i left them out for traditions sake
Served with mashed potatoes, had enough for 4 meals

Honestly can't tell you exactly what I did. I always let the steak come close to room temp before I cook it, and I flip it in the pan every 45 seconds to 1 minute for about 4-6 flips depending on thickness, basting it with its own pan juices and butter the whole time. Then I let it sit covered in foil for a couple minutes. Of all those things I think letting the steak come to room temperature in the center is the most helpful.

That and you also need a pan that is hot enough.

It takes time for heat to conduct from the hot surface of the steak into the interior. So if you want the interior to not be overcooked then you need to keep the cooking time as fast as possible. So you want the pan as hot as possible (without actually burning the oil/butter of course) so that you can get the good crust before the interior has time to heat up appreciably.

can't remember the recipe, it was something I found on the internet about a year ago, nothing too fancy. the thing is that I made this with some friends who cooked it before and they were all "omg best thing ever" so I agreed to stick to the recipe. really wish I didn't, because the stuff tasted really good before the cilantro went in it.

in the end I only ate it because I was polite...

if you do decide to make it, I do recommend making it in a pumpkin (shouldn't be hard to find one this time of year. just take all the bits out, then run some oil on the outside, as well as some salt, then bake it in the oven until the inside is soft. then just pour the stew in it and enjoy!
