Post your favourite pasta dish here!
Mine is Fideos. Spanish in origin, it uses smoked paprika as the main flavour. I was always taught to make it with pork, but it seems anything is up for grabs. Can't wait to try this variant!

I usually make pasta with a tomato sauce including meat or tofu and a few different vegetables, often peppers, zucchini, mushrooms or corn. So I guess that's my favorite pasta dish.

I've been eating more Triestine dishes lately.
Yesterday, I cooked pasta with garlic and scapes, for example, a typical dish.
Since I found scapes super cheap the other day (5lbs for a dollar!), and they're not used much (if at all) in mainland Italian cuisine, I decided to turn to Triestine and Resian kitchens to find ways to use them up before they go off. I expect to make scape pesto tomorrow.

Even though that's probably not what a proper bolognese should look like or even when spaghetti is not the best pasta for it, this dish has something that just does it for me.

I'm gonna say carbonara. It's easy to pull off, but complex enough that you don't feel like a useless NEET while cooking it. Fairly quick and tasty as hell with a bottle of white wine.
