Curry thread! Looking for advice on making delicious curry.

Pic related: made tonight. Was nice, but could have been more flavourful.

Started with the recipe below, but added garam masala and a dash of cinnamon, and substituted the red split lentils with carrot and Bell pepper

Not Japanese.
The colour comes from the turmeric and using coconut.
This is an Indian style curry (in I'm not too sure what region of Indian cuisine it is based on)

Heres two curry recipes I use a lot.

Chicken Tikka Masala
> Grind Cinnimon dry ginger cumin clove and tumeric black pepper Ancho chile powder and kashmiri chile powder salt and cardimon in to a powder You'll need a lot so just eyeball it and theres a solid curry powder.
>Cut chicken thighs to bite size pieces coat with butter and the curry powder
> melt butter in a wok cook onions down add chopped ginger and garic to the onions after they start to become aromatic add the chicken
> when chicken is brown add tomato paste to the center of the wok let it cook then stir it in to the chicken
> add a can or two of diced tomatoes or about three- four fresh chopped let it stew for 15-20 mins add chopped bell pepper for the last five minutes.
> finish off with Dairy of choice(I use coconut milk for the taste) top with cilantro

Japanese Curry with a deep fried pork chop
>Curry powder is Salt, black pepper, ginger cumin and cardamon and cinnamon with a pinch of cyanne pepper and ground star anise. match that with turmeric
>Make a brown roux when roux is complete add Ketchup, Ton-kastu sauce, soy sauce and some of the curry powder to it
>Saute onions in a pot when golden add chopped Carrot and celery and apple after they also become areomatic add chicken stock with a bit of the curry powder when it comes to a boil add some potatoes
>after about 40 minutes check and see if the potatoes are cooked adjust the seasoning add bay leaf, honey, and grated/blended Apple to the pot.

Hmm sounds pretty good. Most chicken tikka recipes I have seen involve marinating the chicken for a ridiculous amount of time... this looks refreshingly simple

Made Red Thai Curry last night, it was so delish.
Chop 1 onion, saute in peanut oil until nearly translucent
Chuck in 4 chopped skinless boneless chicken thighs
Add 3T red thai curry paste
Grate ~5cm ginger, 2 garlic cloves cook it until the paste smells done, add some fish sauce, add sprinkle of sugar, salt pepper etc.
reduce heat, add coconut milk and thinly sliced carrot, capsicum, whatever vegetable needs a fair bit of cooking(could add pumpkin, potato, cauliflour).
let boil gently for 10 minutes, add snow peas and baby spinach(beans, peas, whatever needs not much cooking), turn off heat, serve with rice.
