The farm equipment certainly can be complicated, but once you get it, it's actually pretty simple. It is just a matter of learning and getting used to it.

dried chillies (i used cascabels anchos and chipotles, not sure how many, just filled a large frying pan)
3 white onions, sliced
4 cloves garlic, smashed
4 tomatoes, quartered
couple of anchovies
cumin seed
a stick of cinnamon
3 star anise
smoked paprika
chilli oil
beef stock
4 pieces of short rib
2 ox cheeks

toast the chillies in a dry pan then add the onions, star anise, and chilli oil + anchovy oil.

caramelise down the onions then remove the star anise and add the other spices and the garlic.

when garlic is toasted add the tomatoes and stock, get everything off the bottom of the pan and pour into a pressure cooker.

sear the meat in batches to get strong colour on all sides. then place the short rib pieces vertically around the sides of the pressure cooker and put the cheeks in the middle. make sure everything's covered in broth or water up to around 2/3rds the height of the short ribs, you don't want too much liquid.

bring to full pressure and cook for an hour to 90 minutes. let pressure subside naturally.

take the meat out and reserve. train the sauce, take the whole spices out then blend the other bits of matter into a smooth sauce using some of the broth. add back to the pan, add canned or precooked beans if using and reduce til thick.

take the meat off the bone and cut into large chunks, put it in the sauce and simmer a little longer, then adjust seasoning to taste and you're done.

Alabama style white bbq sauce is definitely way less sweet than the two other styles I mentioned. Some of the ingredients can vary, but all of them contain prepared horseradish, mayo, and apple cider vinegar. the rest is pretty much to taste. typically there is some sort of dried pepper like cayanne, s&p ofc, and most of the recipes i've found put lemon juice in it. well what I did was I let them rest for awhile (I was making like 40 of these) so about 5/10 minutes of restwith plenty of eggs wash to keep it shut, and I fried them in a pan with oil and not a deep fryer
Might also depends on the type of tortilla youre using

you mean rouladen? my family used to make this but we called it "pigs in a blanket." I can't tell if you have pickles wrapped in there or not but if not, I would definitely suggest you do so next time you make this dish. Don't sell yourself short, that looks really delicious!

And yeah that chicken looks way too caramelized to just be salt & pepper.

pan fried salmon with pan roasted potatoes and broccoli. not exactly a 5 star dish but I thought it was pretty good. Nothing too complex just a simple dish with a few ingredients.

about to start the grill

for the onion, i am goin to make a circle of foil jus a bit bigger than the onions to set them on so they dont just burn, and set upside down cast iron pan over them to create a hot zone, after ive heated the pan up on the gas side burner.. bread will go on the top rack to just chill while everything is cooking.

i hope everything turns out ok. im sick of bologna sandwiches this weeek.

I'm trying my hand at baking for the first time today. Was gifted a super nice kitchen aid stand mixer since I've been wanting to get into it for awhile, so

I made an espresso sponge cake, with caramel hot chocolate icing to frost it with. It's cooling now, here's how they came out. I'd say not bad for my first attempt, though some of the crust broke off the side a bit
