ok just for you i tried some. it is a little denser but moister than a traditional sacher torte. there is apricot jam within and around it, and i soaked the bottom layer with apricot juice. i also put apricot juice in the ganache (frosting), and i rolled the excess ganache into the truffles you see. there is also a little hazelnut oil in the ganache. the cake recipe is an american-style cake with creamed butter and cocoa, i added espresso and buttermilk as well. it has been in the fridge for a day so the ganache is quite firm but the texture is still quite pleasing especially when you get a slightly chewy chunk of the apricot. overall i think the bitter/sweet balance is good, the apricot enhances the chocolate flavour without making the cake taste like apricot and the texture is that of a good petit four, light and dissolving when taken with coffee and softly whipped cream. the crumb is addictive on its own because of the salt and i have a huge tub of it leftover which would go well over yogurt.
