All on a toasted everything bagel. The mustard, yolk, and melted cheese blend into this ridiculous saucy mess. Simple but rich and satisfying. I make it every once in a blue as a sort of cheat meal.

Learned how to make this though I use creole and toss some shredded cheese on it. Tossing some bacon on it makes it fucking incredible.

honestly mcdonalds makes good ones but only because they are super salty and greasy

the should be firm orelse it gets allover your hands, so fried/hard poach is the way to go

sausage is nice and substantial, but things like ham/bacon add some sharp flavor. Other things that would go well are like, memevocado cream cheese, green chilis, tomato, lox, crab, mushroom, spinach, etc
