The price does seem excessive, unless that's a super high rent area like Manhattan (in which case it would go out of business for being too plain). However, I do wonder how much the same restaurant would have charged for twice or three times as much food. Perhaps they have a high price for basically any plate of food to cover overhead, but larger quantities cost relatively less, the way a large coke might be twice the quantity for a 20% higher price.

Whether OP ordered 1 egg/bacon/pancake or 2, the greeter still spent the same time seating the person, the server spent the same time taking and delivering the order, the busser spent the same time prepping/clearing the table and refilling the water, the dishwasher spent the same time cleaning the dishes and silverware, and the cook spent nearly the same time cooking and plating the food. I can understand a restaurant owner not wanting to cater to people who order a super small breakfast with super low prices...that's just not good business.
