It cooks at much lower temperatures than beef. Whatever temperature you use to cook meat in the oven try for about 20% cooler than that.

As best as I can tell from research that I've cobbled together, 145F is the safe cooking temperature. I think I'd shoot for more like 165F to be absolutely safe.

People cook Zebra cuts the same way they'd cook beef cuts. The Zebra is a distant relative of the domesticated horse, so I'd recommend starting there. From what I hear, it's a leaner, sweeter, and slightly gamy meat. Something that lean sounds like it would be a bad choice for burgers or sausages.

When in doubt, you can always jerk your meat.

Almost unheard of unless it's in dog food
We don't have any farms raising horses for slaughter (that i know of) so it's hard to find quality horse meat in the states
