Corn fermentables at least have a history in American beer - they were necessary because the barley that grew in the US was too strongly flavored to be suitable for making a pale lager from, thus they added corn the the mas to lower the flavor.

Corn is a classic fermentable in beer, and while there is nothing wrong with using rice, I'd rather have corn than rice.

BTW there is no mention of rice in that link you posted, and rice certainly was not used in medieval brewing in Europe.

Rice wasn't introduced to Germany until the 1600s at the earliest, and would have in no way been cheaper to use than wheat or barley. Wheat was the preferred grain for beer, to the point that there was a law against its use in beer to prevent bread prices from skyrocketing.

I did find an interesting thing when I just searched for what Busch has to say on it for themselves, but it sadly doesn't totally answer the flavor intent. All I know about the flavor intent is that the American market was big into light beers that tasted refreshing and best when served chilled, because that was a great treat when working hard out in the open in typically much warmer climates than most beer style original climates.

True story. I went to high school with Pschorr's great-great grand daughter. She fit the German stereotypes since her family got free beer from the Pschorr brewery and her father owned a meat factory in Germany, so they got free sausages and meatloaf as well.
