He's cooking Sous Vide. Its a type of water cooking. You seal your food in a baggie, and cook in heated water. You will get perfectly cooked food every single time. You literally cannot over cook via sous vide.

Most burger places were offering 15-20% in UK today; had a 7oz Angus burger with a 7oz Swiss stuffed burger with bacon, PB and chili jam, seeded bun and salad. Was way too salty, needed a bowl of pickles to take the edge off, would have again but without bacon.
