I don't doubt that you get something similar to my result, and who knows, yours could even be better. I just see it as similar to cooking a turkey all day in the oven, as opposed to tossing it in the microwave and slamming it on high until it stops bleeding. Just keep in mind that even 5 extra seconds on the high heat with my way results in burnt-tasting eggs and 5 too little gives you raw egg soup. Pull them a couple seconds after they turn opaque. I always get a few paperlike dry bits stuck to the pan unless I'm using my girl's slick new hydrophobic nonstick, I scrape very lightly so nothing burnt gets in with my final product. Don't do steel, it gets too hot.

But dry bits may also just be because I barely rub on enough butter from the end of the stick to coat the bottom of the pan, like not even a teaspoon's worth probably. Hate when people dump butter and cream into their eggs, eggs alright have a naturally buttery flavor and creamy consistency when done right so it just feels like it brings nothing to the table besides a ton of unnecessary calories. You use much dairy for yours?
