In the Delaware valley, it's basically Chinese spaghetti. At its most basic, it's Chinese-style tomato gravy, meat and onions on noodles but it's occasionally got some other veg added to it, too.
In the gulf area from New Orleans to Tampa, it's a noodle soup with the consistency of hot-and-sour but neither hot nor sour. It's not made with tomato, either.

I don't know why it's not common elsewhere.
Neither are beef-and-onion rolls, now that I think about it. It's basically a steak sandwich (cheesesteak without cheese) stuffed into an eggroll skin and deep-fried.

For the record "spicy" almost always means hot as in capsaicin, at least in American english.

American here, there's a ton of chinese food that isn't spicy at all, but definitely has strong flavors. Fried rice and beef broccoli, for example, aren't spicy at all.

We'd just say "strongly flavored" for stuff like that.

Idk what fried rice you guys have in the USA, but fried rice is kinda casual tier so I only get it at the cheap shops.

It's pretty much a big ass wok flame, special sauce made of chicken broth, soysauce, and other shit.

I like home made fried rice, try get some smoked ham shaved, spring onion, quarter onion, egg. Soysauce, garlic. Fry that up to make simple fried rice.

There was a dish I had at a chinese restaurant on a trip that I'd never seen anywhere else.

It was shrimp and seafood extender, tempura fried, with a white sauce that I don't THINK was lobster sauce. Does anyone have any idea what it might have been? I want to try making it one day, and not having to experiment would probably save me a lot of money in fake crab meat.

I tried making shrimp in a sriracha sauce today, the sauce was 100% spot on exactly what I was aiming for but not much flavour went into the shrimp

Is there any way to get the shrimp to absorb more flavour?

Have you considered using corn starch.

You sauce was probably watery and by making it thicker, the sauce clings to the shrimp and makes it more delicious.

I'm assuming you're talking about Americanized Chinese take-out, in which case it's generally not considered high-end cuisine since a lot of it's flavor is derived from just adding a shit ton of grease, sugar, salt, and/or MSG.

I've seen a lot of authentic Chinese restaurants and even some Americanized interpretations of it (that aren't Panda Express tier) that actually get a lot of good reviews.
