That's the base recipe I used, but I tweaked a few things.

Crema was
Puree 4 seeded jalapenos, 1 cup cilantro, 1/2 cup mayonnaise, 1 garlic clove, the juice of 1 lime and 1 tablespoon olive oil. Season with salt.

Just top the nachos with that after they come out of the oven. Would probably be awesome with crab too.

Huge difference between the two. One requires minimal cooking time, the other requires much longer cooking at precise temperature with the proper coating to ensure it cooks through while also retaining juiciness and not burning the coating.

The water is your friend dude. The steam helps with forming the texture. So get a pan bigger than the other pan your flan is in. Don't fill it up with more than 1/4 deep of water. Make sure you don't let any water into your flan. And I usually bake mine for 65-70 minutes.
