Its almost like squash in consistency except when cooked in a soup where it'll turn into basically watermelon but softer if cooked long enough

Not sure what it is specifically but I'd put it in the squash realm. Put some in a soup and describe its texture. Courgette/marrow types will be more fleshy, while wintermelon will be more fall-apart.

Definitely wintermelon, just not a commercially grown one I assume hence the kinda weird shape. Not my fave, but very good for summer, very refreshing. Great in slow-cooked soup with chicken and chinese ham.
