>homemade hummus on both sides of lightly toasted whole grain bread
>thick layer of baby spinach on the bottom
>2-3 slices of polish ham from the deli, folded over 3 times
>two slices of tomato
>a good layer of alfalfa sprouts
>a quarter of an avocado smeared onto the top piece of bread
>sometimes a little red onion

I've been thinking on a sandwich with spicy guacamole anad puffed rice. But I need some kind of tough, salty, flavorful thin piece of meat in the middle. Bacon would be 2cardiacarrest4me besides not being consistent in texture all the way. Beef jerky would be too tough. Should I use pepperoni or something? I'd also toast the bread as much as possible and eat right away so it doesn't soak up moisture from the guacamole. Ideally it wouldn't even be white bread because asking white bread to not get soggy is a fool's game.
