Brown the butter in a skillet before cooking. Don't burn it, but wait until the bubbles stop foaming and the color gains a sort of brown color. That's my secret.

Oh, and never use a power mixer or a whisker (except for maybe the eggs). Fold with a wooden spoon. It's more work, but using a mixer will make your cookies more flat.

Also refrigeration is the most important part. Make your dough and either form a log or something and chuck it in the fridge overnight, or for a few hours, or in the freezer for half an hour.

Baking soda in hot water is a nice tip, I always forget about that but it does add a slight change. Also if you want consistency bake using by mass, not by cups.
