Share your best simple (or not so simple) pasta recipes!

I'll start:
>pan fry some onion and chorizo
>add cherry tomatoes and cream
>right at the end, put in some sliced fresh basil >and serve over penne

back into the warm kettle but off the heat
add olive oil, garlic, chili flakes, salt, pepper, parmesan or cheese of your choice
let sit for a while for the flavors to mix and for it to homogenize a bit

>boil water for your spaghetti
>put 4 incised big tomates for 2 minutes into another pot of boiling water
>chill, remove skins, chop
>fry small diced onions in olive oil, then garlic slices
>add skinless diced tomatoes
>let simmer for two minutes, add little salt and black pepper
>add some butter, or creme fraiche
>add fresh basil
>drain spaghetti
>if you used butter, serve with parmegiano or maybe some feta cheese
if you do it right, then the sauce takes exactly 9 minutes to make, just as long as the spaghetti need to cook al dente.
