What's /ck/'s favorite type of pickle?

I made a batch of pickled sweet peppers, with ginger, garlic, coriander seed, brown sugar, apple cider vinegar, and lime last week, pretty gr8.

Personal favorites of mine would have to be pickled red onions, any kind of pickled cabbage, pickled beetroot, Indian mango pickle, and the classic Kosher dill.

i really like plain fermented salt pickles made with persian cucumbers, the skin is thinner on them.

I make 20 minute pickles in my whipping siphon.

1/2 cup white vinegar
1/2 cup water
3 tbsp sugar
4 tbsp salt
1 tbsp pickling spice
some garlic
some dill
some red pepper

Dissolve the grainy shit in the splashy shit, slice an english cuke and put it in the vessel along with the other stuff, top with the brine, pressurize with 1 or 2 cartridges.

Wait 20 minutes

Anyone ever made pickled eggplant?

I have a shit ton of eggplants that I know I won't be able to use up by the end of the summer, and I thought of pickling.

Another great pickle btw OP is torshi, a kind of Persian/Middle Eastern pickle with tons of variations. Had some of that shit in Turkey and it was GOAT. Kebab cuisine in general is GOAT.

Pickling asparagus is a must during the summer months when you can get it farm fresh. beans as well, and you can make the spicy for caesars.

Always pack the jars tight if you can.
