Image lamb on steroids. If it's really expensive you probably have kid goat, which doesn't require much cook to be delicious. If it's just a little expensive you probably have to braise/stew.slow smoke it. If it's cheap you're being sold mutton instead of goat, and all you can do is stew the living fuck out of it.

It needs to be stewed for at least 3-4 hours. It's my favourite meat, by far.

I love using stewing goat (on the bone) to make pot au feu, it's delicious. It's also good as a curry/spicy stew.

Basically just boil the shit out of it with spices and vegetables and you have a good meal on your hands. It's also typically quite cheap, I pay $10 Canadian for a big sack of goat chunks.

Raccoons too, here's a picture of a nigger coon trying to steal a sammach out of my backpack in Central Park. They come around in packs, timed to the minute, friends and I used to throw rocks at the fucking cunts, that never stopped them. Their schedule of hitting up certain areas is like clockwork.

Some of them are big enough to topple full garbage cans so they can scavange what's contained within.

skin it before you cook it or the hair will be a huge problem. their teeth have good calcium so it will make your poop pretty hard. their tongue is nice and flavorful if you don't mind the texture.

Goat is perfect for curry. It's quite lean, so a long slow cook is pretty essential. Treat it similar to venison. Fast hot cook, or long slow, nothing inbetween.

The way I did it with fresh butchered goat was I put it in some aluminum foil(couldnt get bananas leaves) with some celery and onion and beer and dug a hole and smoked it for ~15 hours. I also made a slow cooked indian goat curry. I found the smoked bits were better
