There's literally no difference. Only difference is the edges are tucked in under the rice. It's still an omelette on top of rice.

The only variations I have seen are whether you like the "wet" side up or down. Sometimes the whole omelette is served "uncut" atop the rice and the diner may cut it open themselves, resulting in a "wet side up" as above.
