The idea isn't bad, but you could've done a lot better with actual steaks. Also, using beef broth for the sauce would've probably been a better idea because it would've helped with the color of the sauce. That looks like plum coulis or something

Well you can make a purple sauce if you want, that's fine. I'd lose the roux then, though, because that's what is making the sauce looks weird. You want a darker, less opaque shade. But I mean, if you like it you like it

May not be under a buck, but here's my favorite budget meal

Mushroom Chicken a la Rice
-4 chicken thighs
- can of cream of mushroom soup
-salt, pepper, fav seasonings
-liquid smoke
-fresh sliced mushrooms (optional)

Pour mushroom soup in a pot with 3/4 of a can of water. Add sliced mushrooms to pot if you have them. Bring to a light boil. Stir in a teaspoon or so of liquid smoke. Set aside. Skin the chicken (usually buying chicken with the skin and bone is cheaper, just requires slightly more labor to remove), season it, sear it in a pan. Pull out a glass dish for the oven. Lay down a small bit of the mushroom soup mixture on the bottom of the dish. Put chicken in dish. Pour the remaining mushroom gravy on top. Bake at 375 for one hour.

Prepare some rice. I also grab a can of french cut green beans as a side and throw some tarragon in them. Viola. Also got leftovers fo days from this.
