A fresh bottle can be pretty spicy by American standards, but I find it wears down after a while in the fridge and starts to just taste like peppery ketchup.

It's like spicy ketchup with heavy garlic notes.
It goes great with a lot of things, but it's not a miracle topping.
Mix it with ranch or mayonaisse for an amazing pizza dip.

Sambal oelek is much more versatile imo. Because it just tastes like chili you can use it in anything. Sriracha has a very distinctive sweet/sour/garlic flavor and the only thing I really like it on is Chinese takeout.
