What are some rolls you make?

In Texas here we have a deadly caterpillar roll (not my creation) thats krab, jalapeno, creamcheese inside with avocado on top with spicy mayo/eel sauce drizzle then broiled in the toaster oven till top is slightly burnt, I give it a 3/10 but the hispanic customers can't stop eating it

I like kimbap better than sushi, not much difference besides the filling. I usually make it with fried egg, pickled daikon, spam, cucumber, carrots or whatever else I can fit in there.
For sushi I really like oregon rolls (avocado, fresh salmon, cucumber) and seattle rolls (cumber, cream cheese, smoked salmon)

But seriously, being a displaced Texan myself, I love my home state with a passion, but the sushi there is a joke. I had some friends take me out for sushi a couple of times the last time I visited, and I had to fake my enthusiasm through those meals because the sushi was fucking awful compared to here. And conversely, the friends who've come to visit me here (in NorCal) and have gone out for sushi with me always say they've been ruined and can't eat the sushi back home anymore because now they know what good sushi is supposed to be like. Just sayin'.....

Where have you been to eat sushi in Texas? Literally every major city has very good sushi. And nearly all of them have Tsukiji Market fish.

There are also many levels of sushi in a big city. Are you referring to the modern/contemporary top tier sushi places? The mom n pop ones? Or the ones owned by Chinese people?

You must have a seriously refined palette with years of sushi tasting to differentiate the best between American cities.

But it's waaay too much work. There are japanese buffet places around here that make good sushi and are quite cheap, no reason to make it at home other than pride.
