My first attempt at home made pulled pork, 1 hour in the pressure cooker.

Bun looks extremely dry. I'm guessing you bought it in a grocery-store brand sack of 6 or 8. Safeway, maybe. The white part looks really dry and grainy, and the crust too flakey and not crusty enough. When it comes to those kinds of rolls, you HAVE to toast them. Slather the insides with butter and griddle them for a couple of minutes. It makes a world of difference. Even if you have good quality buns, you should toast. Makes everything better. Also, the pork doesn't appear saucy enough. Could use a little more.

Yeah that looks extremely dry, OP. It's not going to keep very well or for very long. I recommend using it in a pot of soup tomorrow, or drown it in a sauce of your choosing for another dish. Mole or other Mexican-style sauce for enchiladas/tacos, for example.

I took that pic while I was reducing the left over sauce. Should I drizzle the sauce all over the meat and put it in a container in the fridge or should I keep the sauce separate and serve it when I want to make another roll?

Yes, put the sauce over it, spoon it around so it's mixed through and put it int he fridge. Unless they're going to be home in the next 30 mins-1hr, then you can keep it out.
