Just bought a pack of thick smoked sausages at the grocery store. Plan to grill them up tonight, and serve them on toasted pretzel buns with caramelized vidalia onions.

It's not necessary and the doing them on a skillet will get a Maillard effect on them, boiling them can never do that.

If you're going to use two cooking instruments, just use the skillet, not only will you get better results but you'll have less to clean up afterwards, not that a pot full of boiling water is much to clean up.

Straight skillet is probably quicker too though I've never measured the times on them but it seems as if it would be quicker.

When I do sausages straight on a skillet or grill for instance it takes less oversight meaning I can go do other stuff when it's cooking and it'll smell reall good too. You can tell by the smell when it's time to turn them, and that's gonna vary with the thickness of the sausage etc etc.

I boil em in a dark beer, and once cooked through, I either skillet em, or put em on a grill.

With fat ones, sit it on the pan until it has browned somewhat, then butterfly it with a slice it down the middle and flip it over so the meat spilling out faces the pan. Comes off all fluffy and delicious.

Have you compared to just boiling them in water? Same process but water v. beer? How is the beer going to penetrate through the sausage skin and into the sausage to impart any of the flavor?

It seems that if you're going to boil them, just use water and drink the beer instead of wasting it by broiling the brats in it.

medium well sausages are good if they're really good quality.

Last night I had a few sausages left over from earlier, so I chopped them into thin slices and fried them up with garlic and chilli. Deglazed the pan and poured the lot into some couscous, to which I later added whatever else you want with couscous, I tossed in some cucumber, tomato, red onion and parsley.
