What temperature should I cook chicken leg quarters at, and for how long? Should I crisp the skin in a pan first, or just turn up the heat at the end?

375 for 50-60 minutes, they're hard to overcook tbh. expect a lot of juices/fat to come out and they will brown just fine unless submerged

a mustard rub on the skin will make them puff up and get real crispy

Why does the cooking time go up if put more items in the dish? Wouldn't 3 legs take the same time to roast as one, since they're separate pieces?

Pre-heat oven to 375.
Heat some oil on high in a pot. Prep the oil by gently placing a few ice cubes in the oil. Season the thighs with cornstarch and buttermilk and place in the oil for 1 minute. Turn the oil off and then add seasonings to thighs and place in oven in a shallow pan. Cook for 20 minutes.

Try salting the skin and letting it rest for about 30 minutes. It will draw out moisture. Dab it with paper towels before you put the rest of your seasonings on.

Leave for 5-10 mins to draw more moisture out then put in oven.
Start with high temp then reduce temp.
