Does anyone have any good savory side dishes involving fruit? My husband doesn't like the bitterness of most vegetables but I would still like to have some plant-based nutrition, so I'm trying to find a couple fruit-based things he might enjoy.

agree, or maybe use fruits and vegetables like, avocato, pineapple pumpking maybe, does he like the celery? i've had some sweet ones, not very sweet but nice that would be nice for the fiber thing, try to make the salad more like a fruit salad, with sweet fruits that involve the bitternes of others

> 1 cabbage
> 1 pineapple
> 1/4 liter of cream, (or mayo but less)
> raisins
>sugar if you like
cut the cabbage, boil some water when it's boiling put the cabbage for a minute, dry, cut the pineapple in cubes put in a pan with the sugar making some syrup with it, let it cold, mix it with the cabbage, the cream, the raisins and put in your refrigerator, eat it cold

you can modify the recipe until you got the perfect taste for your husband

Which vegetables does he not like in particular?

You can add various dried fruits to salads. Or use blueberries, they are very neutral and unoffensive.

You could make like a gazpacho with fruit?

You can reduce most fruit with red wine to make a sauce for meat. Google <fruit name> red wine sauce for <meat name>.

Waldorf Salad?

>A Waldorf salad is a salad generally made of fresh apples, celery and walnuts, dressed in mayonnaise, and usually served on a bed of lettuce as an appetizer or a light meal.

http://www.simplyrecipes.com/recipes/waldorf_salad/

I guess the celery and walnuts might be a little bitter but the mayo should take care of that. Or I guess you could figure out some alternatives to those ingredients.
