Don't use Italian eggplant unless you peel it

Japanese and Indian eggplant are GOAT, I literally cannot fathom how you can make them taste bad. They absorb things like sponges and taste amazing.

Fry in olive oil with garlic, salt + pepper, literally all you need

This is very similar. Just pass on the cayenne and use a more neutral oil.

ill prob fry it with the eggplant. thats the last yellow squash of the year, the vine borers killed off all the squash plants.

gonna try the saffron mayo recipe above, i actually have 12 saffron strands in the fridge from the flowers i grew last fall. seems like a pinch worth.

I've gotten 3 "eggplant haters" to start eating it ever since I started growing the japanese eggplants.

Asian eggplants just seem more condensed-- less seeds/air and more meat.
