To y'all haters of macarons,
As much as I hate the trend of overhyped macarons that took the developped world by storm in the last decade (especially in Asia, all those pseudo french, overdyed, pretentious macarons), you are looking at a Ladurée chart here.
I know they too have set up stores all over the world, and maybe you tried them before bashing them, but in case you made a blanket generalization, we are taking about a company that made macarons since the 19th century. And they were the ones who had the idea to assemble 2 macarons and sandwich a ganache in between more than a century ago.

Not a shill and I understand they're not everyone's cup of tea but I've had Ladurée macarons in Paris and as far as macarons go they were really good.

I agree with the idea of your post, however when it comes to "expensive" stuff (let's imagine I know I will be only able to afford 3 macarons) I usually go with the stuff I'll be sure to enjoy.
I'd hate that the only chance I got to try something out of the ordinary was spoiled by a poor selection on my part.

This is why when I go to real good, fancy restaurants (100€+ per head) I rather order something I'm almost sure to enjoy. Also it's always nice to see how a chef can make something extraordinary from something you already know. Salted butter ice cream for example.
I still tried a duck steak tartare and shit was pretty cash tho.

A very small scoop along a pastry made of dark bitter chocolate shell, milk chocolate ganache and roasted peanuts.

As in most chef's creations you are not supposed to guzzle your plate in one big slurp.

But I can guarantee that picking a piece of dark chocolate, a bit of milky ganache, a few pieces of crushed peanut and a hint of salted butter ice cream was an awesome balance of sweet, salty, bitter, creamy, crunchy and velvety.

If you don't see the appeal of this kind of combo, and if you can't understand that a great chef can make this kind of stuff and make it legit, then I'm sorry for you.

Well I'm trying to find a way to phrase this without sounding like a pretentious french, but the butter we have here clearly has a very distinct taste, totally different from all other dairies.
And so different from the shitty Anchor and the other packed butter you find in hotels all over the world.

If in America maybe you should try some hipster organic locally sourced grassfed handchurned butter, or a least some farm butter or any imported "baratte" butter.
I just googled it, I see "european style" butter a lot, I also see "cultured" butter, to us it's just butter like pic related, Isigny is a famous AOC, so is Echiré.

Anyway what I'm getting at is: good butter does have a very specific flavor, and salted butter ice cream was a masterpiece because it managed to have the taste of fresh, delicious butter with the creaminess of ice cream and without feeling like 85% fat.
Can't say any better than this.
