boil pasta, fry pancetta, pull pancetta pan before pasta is done, beat eggs, black pepper, and parmesan in a bowl, pull pasta out of water and put in pancetta+fat fan, stir, add egg cheese, stir, add a splash of pasta water, stir until coagulated, add more pepper and cheese, and occasionally some hot-pepper heresy in some form or another.

put eggs, optionally cheese, salt, pepper, and a bit of butter in a saucepan. bring to a boil on high heat and then cook for 90-120 minutes or until everything has fully turned to carbon. toss with freshly cooked pasta.
