Yes I am. Grew up eating'em. They're delicious. My grandmother used to make them all the time, especially during the greater lent.
I always assumed beanburgers/veggie burgers are just falafel with other things in them in burger form, so that's how I make them: like falafel.

My grandmother's falafel is made from cooked-then-cooled broad beans/fava beans (or fresh, raw, green broad beans), parsley, garlic, toasted cumin seed powder and chickpea flour.

What makes them enchiladas if they're not in a chili sauce? Does 'enchilada' mean something else I'm not aware of? I thought it was basically tortilla wrapped around X and covered in chile sauce.

I'm not entirely sure if you're genuinely curious or argumentative for some stupid reason. I'll assume the former because the latter is, as I just stated, stupid.

Growing up, my mother and grandmother would always simmer in sauce for green enchiladas, and dip tortilla/pan fry for red. That's the way I've always had them, and now as an adult, I don't do them any other way.

I know the dip/fry method isn't exclusive to my family, since a quick image search for "enchiladas recetas" brings up plenty of other examples of red enchiladas being prepared the same way:
http://sazonboricua.com/wp-content/uploads/2013/09/enchiladas41-300x225.jpg

https://cdn.thinglink.me/api/image/560895689295396864/1240/10/scaletowidth

And I know it's not exclusive to Guadalajara (where my mother and grandmother are from) because I had enchiladas being sold on the street out of large copper pot on the island of Janitzio.

So there you go. If it's genuine curiosity, hopefully you learned something, and if you're trying to start an argument, you're free to drown in an ocean of dicks.

This is an older picture of what I made today. Garbanzo bean and vegetable tomato curry with some ground turkey. Not really strictly curry, but more of a saucy spice blend I guess?

I don't generally pick arguments, Anon. I was genuinely curious.
I saw a few not-so-saucy ones in my google search, too, but they were greatly outnumbered by saucy ones.
Sometimes, I can't be fucked with rolling them, so I layer the lightly fried tortillas like lasagne. Heresy, I know.

Depending on the type of tortilla I use, green enchiladas tend to fall apart a lot of the times. Depending on how badly they fall apart, I won't even bother plating them, I'll just toss them in a bowl and eat them like chilaquiles.

There's more shrimp off-camera, I had no idea how to plate it. I was also going to make a basil flatbread, but got lazy.

Too little salmon, and green beans aren't my favorite. That said everything looks pretty nice. Especially like the crust on that salmon.

It's a spiral-cut hot dog with an over easy egg on top of chinese-style fried rice, Mixed lettuce, parmesan cheese and a tomato slice with KETCHUP all over it. Also, some sort of weird carby pizza hybrid?

I'm going to agree with >>6635100 on this one and say that if this sort of looks like some sort of fat american chinese buffet mix?

Does this dish have a specific name?
