/sp/ here, what's the best way to cook a steak not using a BBQ?

My favorite steak is a New York. i also like it medium rare.

roll it in salt and pepper, put it on an oven rack.

heat your oven to 280.

put a thermal probe in the steak, oven bake it to 135. rest it for 10 minutes.

pick a high heat point oil and heat a skillet to like 500 degrees and sear both sides to a desired sear.
