I'm in South Carolina now. grew up Between Rochester and Buffalo. Still make salt potatoes. I get baby new or something. Usually drunk so not sure. Then add a lot of salt and boil. As long as you don't cut into the potato, you're fine and it doesn't absorb it. Just make sure to have the melted butter to dip them into.

as long as the potatoes are sealed up with their skin, it will make a thicker skin on them and be great and is sold at all the fire department BBQ's and carnivals and everything else. But even one slice into the center or try cutting large potatoes up to make them, inedible completely. It's awful if you get a bad one. You almost want to throw up from the salt that got inside it. But you cook them in the salted water until done, drain them, let them dry out a couple minutes to get that coating like in my first photo, perfect. They seriously aren't hardly salty at all it just cooks them perfect inside and forms the crust on the outside. Melt some butter in a small dish (we actually have dishes made just for this and for rolling the sweet corn in) and dip them as you go. Unhealthy but godly.

I don't know really. I just use tiny ones. Since I've moved to South Carolina, they call them just small baby new potatoes. Not sure of the kind. Back home in NY, they sell them in an actual "kit" if you want, it has like 5 pounds of the potatoes and the salt packet included and instructions how to do it (which I mean..add salt to water..boil..not complicated) The wiki says this on the type "Salt potatoes are bite-size "young" white potatoes scrubbed and boiled in their skins. The proper size potatoes are Size B, Grade US No. 2. The potatoes are small and their appearance and shape are not important"
