As for the plating, it's really simple. It's the same principle behind fruit ice cream that is basically just plain milk ice cream with veins of fruit syrup woven into it with some fruit chunks, as opposed to a complete mixed one that's uniformly one color and one taste.

This makes a difference in the range of the flavor experience. If it's all mixed together, that's the only taste I will get, it will be the same for every mouth full. But with the unmixed you can get just plain pasta, a little pasta with lots of sauce, even only sauce and of course a regular mix of both. It gives you more options.
