>frying rice in olive oil

Wait, would that actually work?

You can do this. Always add some carrot before cooking or grate some into it at the end for a crisp texture and maybe finish with some chili pepper dust at the end.

If you boil the rice first, yes. You've heard of fried rice, right?

Olive oil will work fine if it's refined. If it's EVOO you're out of luck.

Mine is extra virgin anon, and I boil before I fry.
Are there any tricks to improve the taste or is this a standard method?

Then you can't fry with it. Extra-virgin has too low of a smoke point for frying. It's for dressings and sauces, not for cooking with. Do you have a different fat like butter, another kind of oil perhaps?

>>Are there any tricks to improve the taste

Sure. Boil in stock rather than water. Don't forget the basic seasonings of salt and pepper.

Not him, but Spanish cuisine uses extra virgin olive oil for cooking often
